I can see already that there's not enough time in the two hours to cover all the material I want to share with the class, so I'll add some extra stuff here.
The two vegetarian cookbooks I have are Vegetarian Planet by Didi Emmons and The Vegetarian Meat and Potatoes Cookbook by Robin Robertson. I also have Mark Bittman's new book Food Matters (on my kindle). I really don't feel the need for more cookbooks as I make free use of the many great ideas and recipes I find on the web. Bittman's book is not a vegetarian cookbook as such but has many useful recipes. The preceeding text presents his philosophy on a low/no meat diet, very similar to that promulgated by Michael Pollan. I recommend Bittman's blog called "Bitten" on the daily New York Times website. There are interesting discussions and lots of good recipes, many of them vegetarian.
How do you like your kindle? You're the second person I know who has one. Apparently they've just come out with a less expensive and smaller one. I'm waiting until they are cheap!
